The hardest part of the recipe is waiting for the popsicles to freeze enough so you can eat them! But even though 4 hours of waiting might seem forever at the time, after your first dreamy bite you’ll know the wait was totally worth the wait. You’ll just wish you’d made a bigger batch!
Each popsicle comes in at less than 200 calories, but they taste so rich and indulgent that you’ll think you’re enjoying an ordinary full-fat full-sugar snack. Better still, because of the high protein content in the Greek yogurt and cream cheese and all the fiber you get from the raspberries, just one popsicle really will leave you feeling full up and satisfied until your next meal. Not bad for a low-calorie popsicle!
This recipe makes 4 large raspberry cheesecake popsicles, but you can easily decrease the ingredients to make fewer popsicles or increase them to make more popsicles. As long as you keep the popsicles totally sealed in their individual molds, they’ll store perfectly well in the freezer for up to six months.
- 2 cups Greek yogurt
- 1/3 cup low-fat cream cheese
- ¼ cup honey
- 1 cup raspberries
- Place the yogurt, cream cheese, honey and raspberries into a blender and blend on high speed for 30 seconds, until all the ingredients are totally combined. You might have to scrape down the insides of the blender a couple of times to make sure everything gets thoroughly mixed up.
- Evenly divide the mixture between 4 popsicle molds and leave to set in the freezer for at least 4 hours until solid.
