Quick Lunch: Open-Faced Mediterranean Sandwich

Break up your ordinary lunch routine with this flavorful and nutritious sandwich, featuring fresh vegetables, tangy feta cheese and crisp toast.


You can enjoy this sandwich with melted cheese on top. Just slip the sandwich under the broiler for a couple of minutes after assembling, until the cheese is hot and bubbling but not so long that the vegetables and toast edges burn.

If you need to bring your lunch to work, you can prep the whole sandwich according to the recipe and store it in the fridge in an airtight container or bag. When lunchtime comes, heat it up in the microwave for a soft sandwich, or cook it under the broiler for a crunchy, crispy sandwich.



¼ red pepper

1 thick red onion slice

Olive oil for broiling

Salt and pepper

1 slice whole wheat bread

2 tablespoons hummus

2 teaspoons feta cheese (or any cheese you like)


Preheat the boiler to its highest temperature. Brush each side of the pepper and red onion with a small amount of olive oil and sprinkle on salt and pepper.

Place the red pepper and red onion under the broiler and cook for around 15 minutes, or until they’re soft and just beginning to char on the edges. Flip the vegetables over halfway through cooking to ensure both sides are evenly done.

While the vegetables are broiling, toast the bread.

Spread the hummus on top of the toasted bread and layer the broiled red pepper and red onion on top of the hummus.

Sprinkle a small amount of cheese on top and serve while still warm.
