Layered Mango Berry Smoothie

Better still, it’s entirely vegan and gluten-free, making it the ideal breakfast or healthy snack for pretty much everyone, whatever type of diet you’re following.

It’s always easier to get out of bed in the morning when you know there’s a healthy and yummy breakfast waiting for you – especially when it’s as pretty as this! Since this mango berry smoothie keeps really well, it’s worth taking a few minutes on a Sunday evening to make up a great big batch so you’ve got a delicious and beautiful smoothie sat in the fridge waiting for you each morning during the week.

This recipe makes one very large smoothie which is enough to serve one or two adults as a meal or snack. However, you can easily halve the ingredients to make a smaller portion or increase them to make as many smoothies as you need.

To prepare these smoothies in advance, follow the recipe below and store each fruit smoothie in a separate sealed container. Each smoothie will keep in the fridge for up to five days and when you’re ready for breakfast, simply stir each individual smoothie, fill a glass half way with the berry smoothie then top it with the mango smoothie. You can prep each smoothie up in a jar and store them individually, but since the smoothies separate overnight and require stirring before drinking, you’ll lose the pretty layer effect if you do.

INGREDIENTS FOR THE BERRY LAYER

  • 1 cup frozen mixed berries (such as strawberries, raspberries, blueberries, blackberries, etc)
  • 1/3 cup almond milk
  • 1 tablespoon maple syrup

INGREDIENTS FOR THE MANGO LAYER

  • ½ cup frozen mango chunks
  • ¼ cup almond milk
  • 1 tablespoon maple syrup

RECIPE

  1. Place all the ingredients for the berry layer into a high-powered blender and blend on high speed for 20 seconds, or until all the ingredients have fully broken down and combined. Pour into a large serving glass and rinse out the blender with water.
  2. Place all the ingredients for the mango layer into the blender and blend on high speed for 20 seconds, until everything is broken down and fully blended. Carefully pour onto the top of the berry layer in the serving glass.
