Summer is prime time for family reunions, long weekend getaways and road trips. Traveling can be a real challenge to our healthy eating goals. But with a little preparation ahead of time, you can avoid the unhealthy snacks found in convenience stores and fast food joints. Here are four fun ideas that are full of nutrients and low on empty calories, and are sure to keep even the kids from fussing.
1. Seasoned Almonds. Put 2 cups of raw almonds into a baggie and toss with a small drizzle of liquefied coconut oil and your choice of the following: cinnamon and brown sugar; rosemary and sea salt; Cajun seasoning and sea salt.
2. Avocado Pesto Dip. Mash 1 large avocado with 1/4 cup of pre-made pesto. Bring a bag of cut-up raw vegetables for dipping.
3. Almond Butter Protein Bars. Heat 1 cup almond butter with 2 mashed bananas and 1/2 cup honey. Set aside. In a bowl mix 1 cup rolled oats, 1 cup diced dried dates or any mixture of dried fruit, 1/4 cup shredded dried coconut; 1/4 cup chopped almonds. Mix together the wet and dry ingredients. Spread the mixture in a lined 9-by-13-inch tin. Bake at 350 degrees F for 25-30 minutes. Let cool before cutting into bars.
4. Nuts and berries. For spur of the moment excursions, a bag of nuts mixed with fresh blueberries works, too.
