Apple Crisp Parfait

This healthy, low calorie version of Apple crisp will become your favorite fall dessert, but you can also enjoy it as a satisfying nutritious breakfast, a wonderful way to start your day.


Just because you’re following a healthy diet doesn’t mean you can’t enjoy the wonderful desserts associated with fall. Apple crisp is one of the most delicious fall desserts there is and by making a few simple tweaks, you can turn a normally heavy and calorie-laden dish into a light and healthy treat that’s actually good for you.

Primarily made of apples, oats and yogurt, this apple crisp parfait is so nutritious that you don’t have to limit it to dessert – you can also enjoy it for breakfast or even lunch! The oats and yogurt are packed full of fiber and protein, respectively, to keep you full until lunchtime, whilst the apples are a fantastic source of vitamin C and will help satisfy any sweet and sugary cravings in a healthy, natural way.

This recipe makes enough to serve one person, although you can easily halve the ingredients to make a smaller portion or increase the ingredients to serve a larger number of people.

Whilst the parfait is definitely best eaten as soon as it’s prepared – when the apples are warm and the oats are crunchy – you can also prepare this dish in advance, cover it with plastic wrap and store it in the refrigerator for up to three days before eating.

The only difference between eating it immediately and storing it in the refrigerator will be that the stored dish will be cold and the oats won’t be crunchy – they will be soft and puffy, having absorbed some of the liquid from the yogurt.



1 apple

¼ teaspoon ground cinnamon

2 tablespoons water

½ cup oats (you can use gluten-free oats)

½ cup yogurt


Preheat the oven to 435F.

Peel and core the apple and chop the remaining fruit into very small cubes.

Place the apple cubes into a small saucepan with the ground cinnamon and water over a medium heat. Cook the apples for 10 minutes, stirring regularly, until the apples are soft and the water has been absorbed.

Spread the oats in a single layer on a lined baking tray and bake for around 10 minutes, until golden and crunchy. Check on the oats every couple of minutes to make sure they don’t burn.

To assemble the parfait, layer 2 tablespoons of yogurt into a glass and top with 2 tablespoons of crunchy oats and 2 tablespoons of apple cubes. Repeat these layers until you’ve used up all the ingredients and serve immediately.
