Black beans are a rich source of protein and fiber, but they can turn out tasteless and bland. A mix of herbs and spices gives these cheesy black bean burgers zesty flavor to go with all the healthy nutrients.

Instead of relying on wheat flour to make the burger ingredients stick together, this recipe uses homemade oat flour, which provides you with added nutrients and fiber. Don’t worry: making your own oat flour might sound quite daunting and time-consuming, but it’s really very simple and only takes a few seconds.

You get two burgers from this recipe, but you can make more while you have time and keep the extra for later. They freeze well and keep in the freezer for months. They keep in the refrigerator in an air-tight container for around one week.

Ingredients
½ cup oats
12 oz cooked black beans
1 egg
2 oz Pepper Jack cheese (or any semi-hard cheese) , grated
½ teaspoon ground cumin
½ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon oregano
¼ teaspoon cayenne pepper
Pinch of salt and pepper
1 teaspoon olive oil
2 whole wheat hamburger buns

Optional toppings: tomato, lettuce, onion and fresh coriander

Directions

Place the oats into a food processor and pulse a few times until they’re ground into a fine flour.

Drain and rinse the black beans, and pour them into the food processor with the oat flour.

Add the egg, cheese, herbs and seasonings to the food processor and process until the beans are fully broken down and all the ingredients are well combined. Remove the lid of the processor and scrape the sides with a spatula, as needed, to ensure the ingredients all blend together.

Scoop the mixture out of the food processor and form them into two evenly sized patties.

Heat 1 teaspoon of olive oil in a pan and cook the cheesy black bean burgers for around 5 minutes on either side, until nicely golden brown.

Serve immediately warm on a toasted whole wheat bun, with your favorite toppings.

    This sounds so easy and delicious! I’d have to use dairy free cheese but an easy swap.

  2. I would also keep it cheese free since my husband is allergic to cheese, when I made something similar I kept the mixture of beans in the fridge so I can make it fresh again the next day.
