Everyone loves dessert around the holidays but as we know, dessert is often loaded with tons of fat, calories and sugar. These holiday desserts are lighter than usual while still tasting great! Stick to just one serving or a small taste of each dessert to keep calories in check.

MINI GERMAN CHOCOLATE TRIFLES

INGREDIENTS
1 package sugar-free, fat-free chocolate pudding mix

3 cups skim milk

2 cups vanilla Greek yogurt

3/4 cup coconut flakes

1/3 cup pecans, chopped

1/3 cup caramel pieces

DIRECTIONS

1. Prepare pudding according to directions.

2. In a pan, toast coconut until browned- about 2 minutes. Remove from pan and mix 1/2 of coconut in with Greek yogurt.

3. Add pecans to pan and toast for 2-3 minutes.

4. Melt caramel bits the the microwave until runny- can add a bit of milk if it is too thick.

5. In a glass, layer chocolate pudding, coconut yogurt and pecans until the glass is full.

6. Top with the additional toasted coconut, toasted pecans and a drizzle of caramel sauce.

These can be made ahead of time for a party to make serving easy. If you prefer, you could make it all in a large trifle serving dish to make it all together. Just double or triple the recipe to make more. I made these ahead of time and ate one a few hours later and it was perfect.

PUMPKIN GINGERBREAD DIP

INGREDIENTS

1 cup non-fat Greek yogurt
1 8 ounce package of neufchatel cream cheese
1/2 cup canned pumpkin
3 tablespoons maple syrup
2 teaspoons cinnamon
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves

DIRECTIONS

With an electric mixer (or by hand), mix all ingredients together well. You can serve immediately or store for later. Top with cinnamon as desired. Serve with crackers, cookies or fruit.

CARAMEL APPLE PUMPKIN PARFAITS

INGREDIENTS
1 large golden delicious apple, diced
1 cup plain Greek yogurt
1/4 teaspoon cinnamon
1/2 cup canned pumpkin
1 cup granola
1 tablespoon pecans, chopped
2 teaspoons caramel sauce

DIRECTIONS
1. In a small saucepan, add diced apple and about 2 tablespoons of water and cook until apple is soft.

2. Meanwhile, mix together cinnamon, pumpkin and yogurt.

3. Layer yogurt, granola and apple until all ingredients run out.

4. Top with chopped pecan and caramel sauce.
